Just like in the old days, there’s a use for every part of the animal. “People are using all different parts,” said Rosy Handl, citing one person who needed pig brains to tan hides. For example, pork cutlets are often called pork cubed steak in other parts of the country, so it’s a learning process to be sure they provide what the customer needs and expects.Īnd it doesn’t stop with edible selections of the animals. They’re also learning the terminology people use to identify different cuts from various regions throughout the country. ![]() “It’s fun to see what the different cultures do with the food,” she said. From German, Jamaican, Native American, and Asian cuisines, everyone comes to the meat shop to find the ingredients they need. Rosy Handl said she has seen more diversity in the meat shop than in practically any other situation around Great Falls. The variety is something that surprised the Handles. Plus, there are a variety of special orders surrounding each holiday celebration from meat and cheese trays brought to parties or traditional ethnic meals only served at certain times of the year that require specific cuts or special parts of meat. This means being sure to have enough prime rib on hand to handle the Christmas season, while looking ahead to corned beef and ham for St. “It’s not just about cutting meat,” Ben Handl explained. “There’s a lot more to it than what you’d expect,” said Rosy Handl. Meat cutting is far more than doling out t-bone steaks or creating fresh hamburger, and being in the business for just over 4 months, the Handles realize it’s a constant learning curve. Gregarious, hard-working, and knowledgeable, Rosy Handl said, “He’s been a huge help to carry on the business. “His knowledge - to pass it down - is awesome,” he said.įortunately, they also have Garet Clark, who worked with Linn for over a year before the Handles took the reins, and is now like family to them. Handles began operating Discount Meats in August under the master tutelage of Linn who has more than 50 years of experience in the art of meat cutting.īen Handl said Linn and his brother, Dean, often help them with bigger projects. It ultimately became a reality as it appeared to be the right move at the right time for both of them. With a longstanding friendship between Ben Handl’s and Linn’s families, the matter of learning the meat-cutting profession and taking over the shop was jokingly brought up as a positive situation for both Linn and Handl. But it made sense for the Handles because it was a way Ben Handl wouldn’t have to travel extensively as was typically required in his construction career. In an even more trending-bucking move, he turned over the reins to the next generation, training Ben and Rosy Handl to continue the tradition at the end of the summer.Ĭonsidering the scarcity of meat shops, stepping into the role of local butcher isn’t on the top of most thirty-somethings career possibilities.
